What we are
We are a San Diego–based Bánh Mì pop-up blending Vietnamese tradition with Mexican influence. Every sandwich we serve reflects our cultures, our families, and the belief that food connects people.
Our Name
In Vietnamese, một means one. But the name isn’t about quantity. Rather, it represents a single meeting point. One sandwich that carries two cultures. One kitchen shaped by Vietnamese and Mexican traditions.
It’s where flavors overlap. Where cultures connect. Where both identities exist proudly together.

Desmond is the founder and owner of Một Bánh Mì and will be the face of the brand, while Marisol chooses to stay behind the scenes as she values her privacy. Still, there is no Một Bánh Mì without her.
She’s the backbone of this company and constantly pushes us forward.
We don’t come from formal culinary training, but we do come from families with high standards of cooking and flavor. Both of our families set a high bar when it comes to taste and care in food.
Desmond grew up on Vietnamese home cooking, and Marisol comes from a family from Oaxaca, often referred to as the food capital of Mexico, where food is central to everyday life. That background shapes everything we make.
Long before Một Bánh Mì existed, one of the ways we bonded was through cooking.
"We took turns making dishes from each other’s cultures and started noticing how much our cuisines shared, from flavor profiles to ingredients and a deep respect for food made with intention."
Some of our menu items may be considered “fusion,” but we prefer the term “cultural exchange”, because that’s what this is.

We have a lot of story to tell, but we’re taking things step by step. We’re still learning, refining our processes, and improving as we go. We have a lot planned for the future and will continue raising the bar on what we believe is the best Bánh Mì.
